Too good not to share.

Yea, I like to cook. Here is my Vegan Zuppa Toscana. Like Olive garden.
Ingredients: 3 Tofurky Italian Sausage, sliced. 1 large bunch of fresh kale. ½ sweet onion, chopped. 5-6 small to medium potatoes, sliced. 1 packet of Lipton Veggie Soup/Dip mix. ~1/4 cup of whole wheat flour (adjust amount for desired thickness). ~1 cup soy milk (I used vanilla, again adjust for thickness). 1 table spoon of minced garlic. 2 table spoons of olive oil. crushed red pepper. ground black pepper. oregano. salt.
Steps: 1. Tear the kale into preferred sized pieces. Rinse and drain in a colander. Set aside. 2. Slice potatoes and boil in a large pot along with packet of soup mix. Add salt and black pepper. 3. Chop onion, slice sausage and brown in a pan with oil and garlic. Season with spices. 4. Mix milk and flour and stir into sausage. Steal some potato water while they are still boiling. 5. When potatoes are getting soft add sausage and onions. Simmer ~30min. 6. Add kale, stir, cover, and let simmer for ~10 min or until kale softens. 7. Enjoy!

I can't guarantee the vegen-ness of it. It's at least vegetarian.
